SIDE DISHES











TASTY SIDES
 
Side dishes made from pantry items do not have to be boring and 
tasteless. Try using the one or more of the suggested ingredients 
to enhance the flavor of your canned and frozen foods. The side 
dishes and other meals should feed a family of four.

Tip: Recipe ingredients are in bold letters. Read the recipes before 
you start cooking. You can enhance the flavor of the vegetables
with one added ingredient or several.


 

CANNED VEGETABLES



Green beans:  Add of one of the following : ½ tsp. minced

onions, or ½ tsp. minced garlic, or ½ tsp. silvered almonds,
or  1/2 tsp. bacon bits, or 1/2 tsp. diced pimentos, or 1 T 
butter or margarine, or 1/4 cup sliced  mushrooms, or
1 cup whole white potatoes ( cut potatoes in half). Reheat 
beans on medium heat for 6 minutes.


Pinto, Kidney, Black, Black-Eye, or White Beans:  Place beans in
the pot  and stir in one of the following:
1/4 tsp real bacon pieces, or 1/4 tsp minced onions, or 1/4 tsp 
minced garlic, or 1/4 tsp red pepper flakes.  Bring to a boil then
simmer on medium heat for 6 minutes.


Corn:  Reheat and stir in one of the following:
1 tablespoon butter or margarine, or 1/4 cup cooked diced red
and green bell peppers, or 1/4 cup drained diced pimento, or 
1 cup lima beans, or 1 cup pintos, or 1 cup black-eye peas,  
1 cup drained diced tomatoes green chiles


Carrots:  Place carrots in pot and stir in pinch of  nutmeg, or 1 T
butter or margarine, or 1 cup of green peas. Bring to a boil then
simmer over medium heat for 6 minutes.

Green peas:  Place peas in a pot and stir in 1/2  drained 
mushrooms or 1/2 tsp minced onions or a pinch of nutmeg
Simmer on low heat for 6 minutes. 
  

Stove Top Candied Yams: 
Tip: use all of the ingredients listed  for best results

Drain liquid from yams and add to sauce pot. Add 1/4 cup packed
brown sugar, 2 Tbutter, 1/2 tsp vanilla, 1/4 tsp  cinnamon
1/4 tsp nutmeg.  Bring syrup to a boil, reduce heat and
add yams. Gently spoon syrup over the yams.  Simmer 6 minutes 
low heat.
Quick Stove Top Baked Beans
Tip:  use all of the ingredients list for best results

Place pork and beans in pot.  Add 1 tsp mustard, 1/4 cup catsup,
1/4 cup brown sugar, 1/4 cup frozen onions, 1 tsp real bacon 
pieces. Mix well and simmer 6 minutes on low heat. 

More Side Dishes:
 
Stove Top Mac & Cheese


Prepare Mac & Cheese Dinner according to package instructions. 
Add 1/2 cup shredded cheddar cheese and 1/8 cup diced pimento
Stir until well blended.  Cover and heat until cheese has melted.  

Bacon and Potato Casserole 

Drain and slice a  can of whole potatoes.  Place sliced potatoes
in a 2 quart casserole dish and toss them with 2 T ranch dressing
Top potatoes with 2 T bacon pieces, 1/4 cup frozen onions,  
and 1/2 cup shredded cheddar cheese. Garnish with paprika.
Cover casserole dish with lid.  Microwave casserole 3 minutes or
until cheese is melted and bubbly.
