SKILLET MAGIC










My large cast iron skillet was my essential kitchen tool when I was a working wife and mother.  I still use my cast iron skillet but I only need the medium sized one now.  It helps to get all of your ingredients in any assembly line when doing skillet meals. Once that cast iron skillet gets hot, it's time to start cooking!  Preparing skillet meals saves time and you have less dished to wash.

Tip: Recipe ingredients are in bold letters. Read the recipes before you start cooking.



Skillet Spaghetti Dinner

Cook 8 oz box spaghetti as directed on package. In large skillet, brown 1 pound ground turkey or ground beef until no longer pink.  Add ½ cup chopped frozen onion and cook until onions are tender. Drain the excess fat.  Stir in  1  teaspoon Italian seasoning and 16 jar of spaghetti sauce with bell pepper.  Simmer over low heat for 15 minutes. Garnish with parsley flakes.


Skillet Beef-a-Roni


In large skillet brown 1 pound ground beef or ground turkey, until no longer pink.  Add ½ cup frozen onion and cook until it is tender. Drain excess fat. Stir in 1 cup shredded cheese and a 16 oz jar spaghetti sauce with bell pepper. Mix well and simmer over low heat 15 minutes. Garnish with parsley flakes.


Mexican Style Beef–a-Roni:  Add packet of Chili mix and cheddar cheese.


Italian Style Beef-a-Roni:  Add 1 teaspoon Italian seasoning and shredded mozzarella cheese.

Skillet Mexican Chili

In a large skillet, brown 1 pound ground turkey or ground beef until no longer pink.   Add ½ cup frozen onion and cook until it is  tender.  Drain the excess fat. Stir in a packet of chili mix, 16 oz jar spaghetti sauce with bell pepper, 1/4 cup catsup, 1/4 tsp cayenne pepper,  1 cup  pinto, kidney, or black beans. Mix well and simmer 15 minutes over low heat.  Garnish with a handful  of cheddar cheese. 

Skillet Sweet and Sour Franks



Cut 1 12 oz  package of hot dogs into bite sized pieces.  Set hot dogs aside. In skillet add 1/4 cup of vinegar, 1/4 cup of sugar, 1 T of corn starch and  1 teaspoon of teriyaki sauce .  Stir often  and cook until sugar has dissolved.  Add 8 ounces unsweetened pineapple chunks with juice and 1/4 cup frozen onions. Add hot dogs and mix well.  Bring to a boil and simmer 6 minutes over low heat.   


Corn Beef Hash with Eggs 
Place 16 oz  canned corned beef in colander and break up beef with a fork.  Rinse beef  with cold water to remove some of the sodium. Shake off excess water before adding to the skillet. Add 2 T olive oil to skillet and stir in 1/2 cup frozen onion, corned beef, and 1/2 cup of cooked diced potatoes. Cook until ingredients are lightly browned. Make 4 wells in the hash. Add a whole egg (need 4 eggs)in each well. Sprinkle eggs with salt and pepper and cover skillet.  Cook until eggs are set. This hash can be served for breakfast or dinner.
