DO YOU HAVE A COOKIE MONSTER?







My sons loved cookies and milk. There was no way I had time
to bake a batch of scratch made cookies during the week. I
a very happy camper when I discovered cake mix cookies.
I made a batch Sunday afternoons. They were allowed three
cookies as a afternoon snack when they finished their homework.
I was elated when my sons  stopped whining and procrastinating
about doing homework. Their motivation was a full cookie jar.




Here are my "go to" recipes for cake mix cookies:




BASIC CAKE MIX COOKIE RECIPE

Box any flavor cake mix
1/3 cup oil
1 tsp vanilla extract
2 eggs


Preheat oven 350. Grease cookie sheet ( line cookie sheet with
silicone mat also an option).

Mix all ingredients in large bowl.  Make two logs from cookie dough.
Wrap second log in wax paper and chill in fridge for later use.
Cut  dough into 2 inch disk and place 2 inches apart on sheet pan.
Bake 7 minutes or until light brown. Cool on wire rack after 5 minutes. Store in cookie jar or tin.













CITRUS BUTTER COOKIES


SEE BASIC CAKE MIX COOKIE RECIPE 
DIRECTIONS & ADJUST RECIPE AS FOLLOWS:



Replace oil with 1 stick of butter
Replace vanilla extract with orange or lemon extract
Add 1 tablespoon zest from orange or lemon.










DECADENT CHOCOLATE CHIP COOKIES



Box White Cake Mix
1/2 cup Brown Sugar
1 stick of butter
1 tsp vanilla
2 eggs
1 cup chocolate chips
1 cup chopped nuts

Preheat oven 350. Grease cookie sheet ( line cookie sheet with
silicone mat also an option).

Mix all ingredients in large bowl.  Make two logs from cookie dough.
Wrap second log in wax paper and chill in fridge for later use.
Cut  dough into 2 inch disk and place 2 inches apart on sheet pan.


Bake 7 minutes or until light brown. Cool on wire rack after 5 minutes.Store in cookie jar or tin.










I spent one Saturday afternoon trying to come up with new recipes
for my cake mix cookies. I thought about the delicious cookies
that I buy from my local specialty markets. 

 
Here are my copy cat version of these cookies:





 




CHOCOLATE ESPRESSO COOKIES

Box Chocolate Cake Mix
1/2 cup Brown Sugar
1 stick of butter
2 tsp instant coffee powder
2 eggs


Preheat oven 350. Grease cookie sheet ( line cookie sheet with
silicone mat also an option).

In large bowl beat eggs, sugar and ground coffee on high speed 
3 minutes. Lower speed and add in butter and cake mix. Mix well with wooden spoon. Make two logs from cookie dough. Wrap second log in plastic wrap  and chill in fridge for later use.
Cut  dough into 2 inch disk and place 2 inches apart on sheet pan.
Bake 7 minutes or until light brown. Cool on wire rack after 5 minutes. Store in cookie jar or tin.






TOFFEE BITS CHOCOLATE COOKIES


Box Chocolate Cake Mix
1/3 cup oil
2 eggs
1 cup toffee bits


Preheat oven 350. Grease cookie sheet ( line cookie sheet with
silicone mat also an option).

Mix all ingredients in large bowl except toffee chips.  Make two logs
from cookie dough. Wrap second log in plastic wrap and chill in fridge for later use.
 
Cut  dough into 2 inch disk and place 2 inches apart on sheet pan.
Sprinkle crushed toffee bits on each cookie and press bits into cookie dough.

Bake 7 minutes or until firm to touch. Cool on wire rack after 5 minutes. Store in cookie jar or tin.



 


SUPREME COCONUT PECAN COOKIES



Box White or Vanilla Cake Mix
1/2 cup Brown Sugar
1 stick of butter
1 tsp vanilla
2 eggs
1 cup sweet flaked coconut
1 cup chopped pecans


Preheat oven 350. Grease cookie sheet ( line cookie sheet with
silicone mat also an option).

Mix all ingredients in large bowl.  Use 2 inch cookie scoop
or tablespoon and place cookie dough  2 inches apart on
sheet pan.

Bake 7 minutes or until light brown. Cool on wire rack after 5 minutes. Store in cookie jar or tin.
