KEEP YOUR COOL DESSERT
I WANTED A QUICK NO BAKE DESSERT
USING WHAT I HAD ON HAND.I REFUSED
TO STEP FOOT IN THE GROCERY STORE
THIS WEEK-END! VOILA! THIS RECIPE
WAS BORN:
LYDIA'S PINEAPPLE -TOASTED COCONUT ICEBOX CAKE
9 X 4 1/2 BREAD LOAF PAN OR DISH
16 OZ BAG VANILLA WAFERS
2 SMALL BOXES INSTANT COCONUT PUDDING MIX
2 1/2 CUP COLD MILK
8 0Z WHIPPED TOPPING,THAWED
8 0Z CAN CRUSHED PINEAPPLE, DRAINED (RESERVE JUICE)
1/2 CUP TOASTED FLAKED SWEETENED COCONUT
IN BOWL, COMBINE MILK, RESERVED
JUICE & PUDDING MIX UNTIL SMOOTH.
STIR IN DRAINED PINEAPPLE & MIX WELL. LINE BOTTOM OF LOAF PAN OR DISH
WITH VANILLA WAFERS. SPOON PUDDING MIXTURE ON TOP OF WAFERS.
REPEAT LAYERING UNTIL REACH TOP OF
PAN (END WITH WAFERS ON TOP). SPOON WHIPPED TOPPING ON TOP OF WAFERS. SPREAD TOPPING EVENLY WITH BACK OF SPOON. SPRINKLE WITH TOASTED COCONUT. CHILL 6 HOURS OR OVERNIGHT.
ENJOY THIS REFRESHING DESSERT!
HOW TO TOAST COCONUT:
PREHEAT CAST IRON PAN ON MEDIUM
HEAT. ADD COCONUT AND STIR SEVERAL
TIMES UNTIL TOASTED GOLDEN BROWN.
DO NOT LEAVE UNATTENDED SINCE IT BURNS EASILY!! REMOVE FROM HEAT
AND LET COOL. SPRINKLE TOASTED COCONUT ONTO WHIPPED TOPPING.
TIPS:
STORE BRAND VANILLA WAFERS WORK
BEST. THEY ARE THICK & CRUNCHY
& HOLD UP WELL IN ICEBOX CAKES.
THE STORE BRAND PUDDING MIX WORKS
AS WELL AS BRAND NAME.THIS PUDDING
MIX HAS COCONUT ALREADY ADDED!
ADDING 1/2 CUP PINEAPPLE JUICE TO PUDDING ENHANCES FLAVOR.
COCONUT CAN BE TOASTED IN MICROWAVE ON A GLASS PLATE. YOU HAVE TO STOP & STIR EVERY MINUTE TO PREVENT BURNING- TAKES ABOUT 3 MINUTES.
