SEASON FOR GRILLING, BBQ SAUCES







Since I live in Carolina country, I have to start with Carolina style barbecue sauce.  I personally do not care for a strong mustard taste in my sauce.  I like vinegar, but I do not  want it to be so strong that it makes me cough!

The best Carolina barbecue sauce that I ever
had was when I was in college. My girlfriends
knew several older ladies who loved to invite
us college girls to Sunday dinner.  Their kids
were grown and they did not have anyone to 
use those good cooking skills on.  Of course 
we volunteered to come by anytime. 

We discovered that these ladies  loved to 
cook out during the summer.   They  had 
cook-outs in their garage every Saturday
afternoon. The men filled galvanized tubs 
with  beer and grilled  all  day  long. They
grilled all kinds of delicious food.The meat 
tasted so  good. One of  the  men always
had his secret sauce in a large mason jar. 
It was the best sauce I had ever tasted. I
realized may years later that I was  young
and foolish.I did not try to get that recipe!
I have tasted a lot of BBQ sauces but none
have come close to  his  tasty sauce.  All I 
saw in the sauce was vinegar and crushed
red pepper flakes.  I could not guess what 
the secret ingredient was. 

The key to a great Carolina style sauce is
combining the correct amount of vinegar, 
hot sauce, and  sugar.   I have reviewed 
five  Carolina barbecue recipes and have 
made three of  them.   I have adjusted 
some of the barbecue sauces to fit my 
family's taste. I hope  you find a sauce 
that your family will enjoy.








CAROLINA STYLE BBQ SAUCE #1

1/4 cup unsalted butter
1 1/2  C  cider vinegar

1  1/2  C  ketchup
1/2   C  packed brown sugar
1/4 tsp cayenne pepper
1/4  tsp crushed red pepper
1 tsp salt

1 tsp black pepper


Melt the butter in a pot over medium high heat. 
Add the remaining ingredients and them bring 
to a boil. Reduce heat and simmer 20 minutes.  







CAROLINA STYLE BBQ SAUCE #2

4 C cider vinegar 
4 C white vinegar
1/4 cup salt
1 T cayenne pepper
2 T crushed red pepper flakes

1 C packed  light brown sugar
1 T  hot pepper sauce




In a pot add all of the sauce ingredients. Stir
and mix well. Bring the sauce to a boil over
medium heat.  Reduce the heat and simmer 
20 minutes.  








CAROLINA STYLE BBQ SAUCE #3

1 1/2  C cider vinegar
1 C  yellow  mustard
1/2 C ketchup
1/3 C packed  light brown sugar
1 tsp  salt
1 tsp  cayenne pepper
1 tsp   black pepper


In a pot add all of the sauce ingredients. Stir
and mix well.  Bring the sauce to a boil over
medium heat.  Reduce the heat and simmer 
20 minutes.  










HONEY BBQ SAUCE

1 C ketchup
1 C vinegar
1/2 cup honey

1/2 C packed brown sugar
1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp hot sauce



In a pot add all of the sauce ingredients. Stir
and mix well. Bring the sauce to a boil over
medium heat.  Reduce the heat and simmer 
20 minutes.  










PAPRIKA BBQ SAUCE


1/2 C packed  light brown sugar
1 tsp paprika
1 tsp  garlic powder
1 tsp onion powder
2  T  vinegar
1 C  ketchup
2 T yellow mustard
2 T Worcestershire sauce

In a small bowl, combine all the  ingredients.

Stir and blend until sugar has dissolved.Great 
basting sauce for grilled ribs, chicken and pork. 






 
 
HONEY MUSTARD SAUCE

4 T honey dijon mustard
1 T  oil
1/2 tsp  salt
1/2 tsp  black pepper







In large resealable plastic bag add all of the
ingredients. Add 3-4 pounds of chicken or
pork and marinate 3 hours. Grill meat until 
juices run clear.

TIP: I use French's honey dijon mustard for

marinating chicken & pork.I use Ken's Honey
Mustard dressing  for  basting grilled chicken 
and pork. Ken's is also  a good dipping sauce
for grilled chicken wings.





CAROLINA MUSTARD BBQ SAUCE





4 T. butter

1/2 onion, chopped

1/2 C  yellow mustard          

1/2 C  packed brown sugar

1/2 C  cider vinegar

1 tsp  cayenne pepper

1 bay leaf

1/2 tsp salt or to taste







Melt the butter over medium heat
then saute’ the onion until soft.Add 
the remaining ingredients and mix 
well.  Simmer on  low heat for 30 
minutes.
 

TIPS:



Use  sauce toward the end of grill the meat

because the sugar  will cause the meat

to burn.



REMOVE BAY LEAF BEFORE SERVING!!











KANSAS CITY STYLE BBQ SAUCE


    2 C  ketchup
    1/2 C vinegar
    1/2 C packed brown sugar
    5 T butter
    3 T paprika
    2 T chili powder
    1 T chipotle powder
    2 T minced garlic
    1/2 medium onion, chopped
    Salt to taste
   


Melt butter and sauté onion and the garlic .  Add the  remaining ingredients and mix well. Simmer low heat for 30 minutes.

Tip: Use this recipe when  grilling for a crowd. Use on racks of ribs, 5 pounds of  chicken, and pork shoulder.
